Sprouted Lentils Recipe

- 1 cup green lentils
- 1/4 cup cooked corn
- 1/4 cup thyme (or another herb of your choice) finely chopped
- 1/2 tsp chili powder
- 1/2 tsp curry paste
- 1/2 tsp cumin
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 1 tsp salt
- 3 cups water
To sprout lentils
Soak lentils overnight in a large dish or for 8-10 hrs.
Drain and rinse lentils. Cover the lentils with a towel and put them back into the bowl. Let it sit for eight hours.
Shake or gently stir the bowl to ensure that all the lentils are getting enough air. Let it sit another 8 hours.
Repeat for 2-3 days. On the second day, you will notice sprouts. They get bigger on the third.
Use them as needed.
How to Assemble everything
Mix sprouted lentils with corn in a large bowl.
In a small mixing bowl, combine the lemon juice with the olive oil, cumin powder, chili powder, curry paste and thyme.
Pour the liquid over the sprouted corn and lentils.
Use it to make a salad, or in soups or sandwiches.
