Matcha Pancakes

When I was looking for new ways to enjoy matcha my mind turned to pancakes. This was an excellent place to visit. My house is always open to pancakes!
Matcha turns pancakes green and makes them perfect for St Patrick's Day. It also gives a bit of the superfood qualities that matcha offers.
It doesn't get any better than pancakes with healthy matcha!

Ingredients
  

  • 1 tbsp green tea powder (matcha)
  • cup  all-purpose flour
  • 1 large egg
  • 2 tsp baking powder
  • 1/4 tso salt
  • 1/4 cup white chocolate chips
  • 1 cup cashew milk
  • 1 tbsp cashew milk
  • 1 tsp vanilla extract
  • 2 tbsp olive oil

Instructions
 

  • In a large bowl, whisk together flour, matcha powder, baking soda, and salt. Create a well at the center of the mixture. Add 1 cup plus 1 teaspoon cashewmilk, egg, olive and vanilla oil to the well. The batter should be whisked briefly until only a few small flour clumps remain. Add chocolate chips; stir again briefly.
  • Heat a small saucepan on medium heat. Spread batter evenly with the back end of a spoon. Cook for about a minute, or until bubbles appear and burst on the surface. Flip the pancake and continue to cook until edges are golden, approximately 1 minute. Repeat with the remaining batter.
