Orecchiette Garlic, Chilli & Wild Greens

Homemade egg orecchiette served w/ garlic, chilli, extra virgin olive oil, sauted greens and a touch of cream, a rich and spicy recipe from the south of Italy.

Ingredients
  

  • Broccolini
  • Flour
  • Semolina
  • Cream
  • Water
  • Garlic
  • Chilli
  • Olive Oil

Instructions
 

Preparation

  • Defrosting Instructions: Place sauce in the refrigerator for 24 hours to defrost it. Leave the Pasta in the freezer as this will be cooked from frozen. Alternately, you can place the sauce bag from frozen into a 60 degree bath for around 90-120 minutes or until the sauce is fully defrosted.

Heating Instructions:

  • Prepare a pot with water and bring it to the boil.
  • Add 7gr of rock salt for each litre of water and ensure the water is boiling before you add the pasta (lots of bubble, not just a few - to achieve this make sure the pot is covered with a lid while bringing the temperature up)
  • Add the pasta straight from the freezer, cover the pot again to regain high temperature as fast as possible, and only stir the pasta once the water is back to the boiling point. Cook for 3-5 minutes or to your taste.
  • In a different pan, place the sauce and heat up for few minutes or until simmering.
  • Before draining the pasta, take 1/2 cup of the cooking water and poor it in the pan with the sauce.
  • Drain the pasta, place it in the pan on high heat and toss it for few minutes, adding 20gr of Parmesan if you'd like.
  • Enjoy.
