If you like crepes then invest in a 10 inch crepe pan. A good skillet or 10-inch nonstick pan will do.
Ingredients
- 2 eggs, beaten
- 1 cup of milk or milk alternative
- Butter or buttery spread (melted): 1 tablespoon
- Orange juice, liqueur or sweetener, 2 tablespoons
- 1 cup white rice flour
- Half a teaspoon of salt
1. In a medium mixing bowl, beat eggs. Add the milk, orange-flavored liquor (or orange juice) and butter.
Mix the ingredients together.
2. Add the white rice flour, salt and baking soda. Mix the ingredients thoroughly and then blend until smooth.
3. Heat a nonstick skillet on medium heat, lightly greased.
4. Pour 1/4 cup batter in a skillet, and swirl it to distribute evenly. Cook crepes for 30 seconds on each side, or until they begin to brown.
5. Flip the crepe with a spatula, and cook the other side 30 seconds or until it begins to brown. Keep the crepe warm in the oven.
6. Continue until all the batter has been used.
7. Keep unfinished crepes in a refrigerator in an airtight container.

What kind of milk can I add to the crepe batter when making it?
You can use any type of cow’s milk, including skim, 1% or 2%.
Substitute the milk for an alternative milk, such as:
- soy milk
- Coconut milk – full fat or lite?
- Almond milk
- oatmeal milk
Sweetened milk is best for sweet crepes. You can use unsweetened milk.
Make the batter dairy-free by using a vegan spread.
Serving suggestions
I like to serve crepes a number of different ways. Crepes are traditionally served with powdered sweetener and lemon juice.

Fillings that are popular for breakfast include yogurt, fruit or honey with a touch of jam, nut butter, sunflower butter, or peanut or sunflower seed butter.
