Why I love this recipe
Almond milk pancakes are one of my favorite pancakes. They are delicious, easy and dairy-free. My only concern was whether the addition of matcha would affect the texture or taste.
But I have some experience with matcha. Along with occasionally making brownies and muffins or cookies I also drink almost every day a tea latte. This has taught me matcha tastes best when it is balanced with vanilla and sweetness.
I decided to add both matcha powder, and vanilla extract, to my pancake mix, and the result was lovely, tender, fluffy green tea pancakes. This is how we want our pancakes.
Ingredients
- 1 cup all-purpose flour
- 1 tablespoon green tea powder (matcha)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup cashew milk
- 1 tablespoon cashew milk
- 1 large egg
- 2 tablespoons olive oil
- 2 teaspoons vanilla extract
- 1/4 cup white chocolate chips
Directions
- In a large bowl, whisk together flour, matcha powder, baking soda, and salt. Create a well at the center of the mixture. Add 1 cup plus 1 teaspoon cashewmilk, egg, olive and vanilla oil to the well. The batter should be whisked briefly until only a few small flour clumps remain. Add chocolate chips; stir again briefly.
- Heat a small saucepan on medium heat. Spread batter evenly with the back end of a spoon. Cook for about a minute, or until bubbles appear and burst on the surface. Flip the pancake and continue to cook until edges are golden, approximately 1 minute. Repeat with the remaining batter.
