Empanadas are a delicious soft pocket of dough stuffed and baked with delicious savoury fillings. This vegetarian play on traditional Argentinian empanadas is so good, you’ll almost not realise there’s no meat inside. The traditional recipe comes from Córdoba in Argentina, but is reimagined here sans meat. The freshly made pastry that houses the veggie filling is golden brown, crunchy and very moreish.

Storage

Meal stored in freezer will last up to 6 months.
If storing in the refrigerator (-5℃ or below), meal should be consumed within 3 days.
Meal should not be refrozen after defrosting.

Preparation

Do not defrost.

1. Remove meal from freezer and place on baking tray.
2. Spray or brush olive or canola oil (if you have) over empanada.
3. Place empanada in the oven on 210℃ and heat for 12 minutes. Check to see if golden brown. Cook for a further 2-3 minutes until golden and ready.
4. Let meal stand for 1 minute and heat further if required.
