Cumin, coriander and paprika spiced eggplant meatballs, baked in a Mexican tomato sugo, topped with a fresh herb chimichurri, homemade queso and fried plantains—Served on 8 handmade corn tortillas.

Easy to prepare and comes with instructions - serves two people (8 tortillas).

This kit is vegetarian.

Dietary Information

Ingredients:

Eggplant, tomato, garlic, onion, salt, pepper, olive
oil, breadcrumbs, flour, chilli, cumin, coriander,
paprika, sugar, water, corn masa, vegetable oil,
parsley, kale, milk, milk powder, condensed milk,
mustard, mozarella, tasty cheese, plantains,
potato, bicarbonate soda, polenta.

Contains: gluten, dairy and nuts.

Storage

Refrigerate up to 6 days, to be consumed within 3 days of opening. Store in the freezer for up to 6 months.

Preparation

Defrost before cooking by leaving in the fridge for 24-48 hours.
Give the salsas a good stir after defrosting.


Eggplant meatballs - Oven
1. Heat the oven to 180C.
2. In a small baking dish, place the eggplant
meatballs and pour the tomato sugo on top
and around.
3. Heat in a hot oven for 5-10 minutes until
warm through.

Tortillas
1. Heat a pan or skillet over medium-high heat
(do not add oil).
2. Once hot, add the tortillas (one at a time) and
cook on each side for 10-15 seconds.

Assembly
1. Place a warm tortilla on serving dish.
2. Add 1-2 meatballs as a base, (or smoosh 1
meatball into tortilla ) then layer with a couple
of spoonfuls of the tomato sugo and top with the
chimichurri, fried plantains and queso to finish.
