Avocado Toast With Savory Seeds Crunch

This recipe adds a playful twist to the popular avocado toast. The toast is topped with walnuts, sunflower seeds, and pumpkin seeds for a crunch factor. It's easy to make and tastes great. By adding fresh Hass Avocados to your family's daily recipes, you can increase the amount of fruit and vegetables your family consumes. These avocados are delicious, healthy, and rich in natural good fats.

Instructions

  1. Heat oil in a small pan over medium heat. Once the oil is hot, add shallots, jalapeno, and cook for two to three minutes until completely wilted. Add salt and stir well.
  2. Add the sunflower, pumpkin, and walnut seeds to the middle of the pan. Let them cook without stirring for 30 seconds, then stir in the shallots, jalapenos, and cook another 2 minutes. The seeds and walnuts should be lightly toasted. Stop the heat. Mix the lime juice with a drizzle of freshly squeezed. Scrape onto a bowl. Salt to taste and add more as needed.
  3. Add between 3 and 4 avocado slices to each toast piece. Mash gently with a fork, if you wish. Top with the crunchy mixture.

    • 1 pc. Avocado  (halved, pitted, and peeled)
    • 2 tsp Canola or safflower oil.
    • 14 cup. thinly cut shallots
    • 1 pc. jalapeno (Finely chopped)
    • 1/4 tsp. of kosher sea salt
    • 1 cup. walnuts (coarsely chopped)
    • 1/4 cup. raw pumpkin seeds (hulled)
    • 1/4 cup. sunflower seeds
    • 1 tsp Freshly squeezed lime juice
    • 2 tsp chopped cilantro (for garnish)
